The order
In order01HeatBoil 8 small potatoes until soft. Do not add extra water, as they'll get mushy.
02PrepCut them in half to cool faster.
03PrepOnce cooled, remove the skin and mash them (do not mash while hot).
04PrepTo the mashed potatoes, add the green chili, ginger, garlic, coriander leaves, salt and breadcrumbs. Mix thoroughly until everything is well combined.
05PrepForm small round or oval patties from the mixture using your hands.
06HeatHeat canola oil in a shallow pan over medium heat.
07HeatPlace the patties in the pan and cover with a lid.
08HeatLet them cook until the bottom side turns golden brown.
09HeatFlip once or twice, cooking until both sides are crispy and browned. Monitor the heat so they don't burn.
